Basil Salmon
Fish is always a good choice! Salmon contains a great amount of Omega 3.
Ingredients:
1 – 1/2 cups fresh basil leaves
3 + 2 tablespoons olive oil
2 teaspoons minced garlic
1 teaspoon pepper
1 teaspoon fresh lemon juice
1/4 tablespoon salt
1 tablespoon shredded Parmesan, plus 4 teaspoons shredded Parmesan cheese, divided
4 salmon fillets
Procedure:
For pesto, combine basil, oil, garlic, pepper, lemon juice, salt and 1 tablespoon Parmesan cheese in a food processor. Cover and process until finely chopped.
Place the salmon in a greased baking dish. Spread 2 tablespoons of pesto over fillets. Leave the remaining pesto for some other meal (keep it in the refrigerator but not longer than 3 days).
Bake the fish uncovered at 400° for 20-25 minutes or until fish flakes easily with a fork.
Sprinkle with remaining cheese. Bake 2-3 minutes longer, just until cheese is melted.
Extra tip: Be careful with the salt – the fish is quite salty itself, so is the cheese. Serve with a nice mixed salad and a glass of white wine.
